Bow Ties & Veggies

  • 2 Tbsp. olive oil
  • ½ large sweet onion, sliced
  • 1 cup broccoli/cauliflower mix, chopped
  • ½ cup Red Sun Farms®/Golden Sun® bell peppers, chopped
  • 2 cups bow tie pasta, prepared according to package directions
  • ½ cup Red Sun Farms®/Golden Sun® cocktail tomatoes, chopped
  • ½ cup feta cheese, crumbled
  1. Heat oil in large skillet over medium-high heat; add onions, broccoli/cauliflower and peppers, and cook 5 minutes or until tender.
  2. Reduce heat to low; add cooked pasta and tomatoes, and heat 1 minute or until warm.
  3. Top with cheese.
For a complete meal, serve Bow Ties & Veggies with:
• Salad topped with radish, avocado, Red Sun Farms®/Golden Sun® cucumber and lowfat salad dressing
• A glass of 100% juice
