Yellow Pepper Jam
Serves: 4
Ingredients
  • 4 Red Sun Farms yellow pepper brunoise
  • 2 small shallots, diced
  • 6 fl oz Pernod
  • 5 fl oz Triple Sec
  • 2 cup pineapple Juice
Instructions
  1. Place all ingredients in saucepan, cover with pineapple juice.
  2. Bring to a boil.
  3. Reduce heat and simmer to jam consistency.
