RSF Mother's Day

Mother’s Day is just around the corner. If you’re searching for ways to treat Mom, look no further. Get the kids involved with creating a delicious home-cooked meal, whether it’s part of breakfast in bed, a snack for an at-home spa day, or a light lunch. Bonus: getting kids involved in the kitchen has been shown to lead to healthier eating habits!

For breakfast in bed, the kids can mix together chopped veggies in Mini Vegetable Quiche Phyllo Cups. If you have child-safe knives, let the kids chop some of the veggies; if not, they can wash them for you to cut. Without a complicated piecrust, this dish is easy for little ones to make with the supervision of another parent.

Another great breakfast in bed treat is Bagel Quiche. Add chopped sweet bell peppers, mushrooms, broccoli, or whatever Mom’s favorite veggies are to the egg mixture and bake. Serve on a tray with a cut flower and the kids’ Mother’s Day cards.

For a mom who prefers a bread-free breakfast, kids can do the lion’s share of the load in creating Morning Magic Frittatas. This recipe is easily adaptable for those with dairy or gluten sensitivities, and it can be easily customized with Mom’s favorite fruits and veggies.

Herbed Cucumber Bites are a great afternoon treat that pair especially well with an at-home spa treatment! Buy Mom some Epsom salts and scented oils, then put on her favorite music or podcast while she enjoys creamy herbed cheese piped onto crisp, refreshing cucumbers.

For a light lunch, kids can assemble pre-cooked tortellini, sweet bell peppers, grape tomatoes, and fresh basil in Pasta Salad Skewers (or toss ingredients together in a bowl).
